"Have your cake and eat it too," said Matt de Gruyter, co-founder of Next Level Burger while addressing a crowd of community members and influencers Thursday evening.

The plant-based burger chain is opening it's 10th location in Seattle's Ballard neighborhood, it's second to open in Seattle following it's Roosevelt location inside Whole Foods.

To celebrate, the restaurant is hosting a grand opening event Thursday, January 28th starting at noon. The first 100 guests will get free burgers & t-shirts, as well as free hot chocolate and coffee for those early and waiting in line. There will also be a DJ, face painting and other family-friendly activities.

If you never heard of or eaten at Next Level Burger, then you are in for a real treat. The restaurant concept provides guests with the classic burger joint experience, but without the use of any animal products. “Next Level Burger is all about best-in-class ingredients and meaningful sustainability – we

serve up incredible, craveable food that’s good for the people and the planet. At NLB our guests can find plant-based fuel to optimize and support their healthy lifestyles and feel good about fighting climate change," said de Gruyter.

Next Level Burger was founded by Matt (left) and his wife, Cierra de Gruyter, and were inspired to start their burger venture to support a brighter future. Their mission is to fight climate change by serving burgers for a better world—made with all-organic veggies and non-GMO ingredients.

The menu has everything from signature and pub style burgers, shakes, onion rings and so much more. While the quick service restaurant serves 100% vegan options, it's interesting to

note that a majority of its customer base across the country are flexitarians, or whose normally meatless diet occasionally includes meat or fish.

My Take

I got to say - as someone who eats it all, I don't find my experience at Next Level Burger any less than if I were to visit Seattle burger favorites like Lil' Woody's, Red Mill or even Shake Shack. The burgers, sides (hello tater tots, sweet potato fries, and onion rings), and shakes are all very delicious and worthy of praise for not only it's flavor but for the restaurant brand's commitment to sustainability and the environment. The use of recyclable aluminum cups, compostable packaging and the use of the highest quality ingredients available - and doing so all across America, from NYC to Seattle and cities in-between - is a testament that their business model is here to stay.

Next Level Burger is open for lunch and dinner daily from 11 a.m. to 10 p.m. at 1401 NW 46th St., Suite 126.
